- Onion – 3 large onions, finely chopped
- Garlic – 4-5 cloves
- Dry red chilli – 4-5 (You can also take red chilli powder)
- Cumin – 1 teaspoon
- Curry leaves – a handful (optional)

- Oil – 1/2 tbsp

How To Make Onion Chutney:

Step 1. First, peel and finely chop the onion. Peel the garlic cloves and set them aside.

Step 2. First, soak 10 dried red chilies in hot water for 10 minutes. Set aside.

Step 3. Heat 2 tablespoons of oil in a large pan. Add 1/2 tablespoon of urad dal, 1/2 tablespoon of chana dal, 1 teaspoon of cumin seeds, and 1/4 teaspoon of fenugreek seeds.

Step 4. Saute until the dal becomes fragrant.

Step 5. Add 10 garlic cloves and saute lightly.

Step 6. Next, add 4 chopped onions and saute until the onions begin to shrink slightly.

Step 7. Add 1/2 teaspoon salt and cook until the onions change color slightly. Now add the soaked red chilies and small ball-sized tamarind and fry for 2 minutes

Step 8. Let it cool completely and make a smooth paste without adding water. Set it aside.

Step 9. Heat 1/4 cup oil in a large pan. Add 1 teaspoon mustard seeds, 1/2 teaspoon urad dal, a pinch of asafoetida, and a few curry leaves. Let the tempering crackle.

Step 10. Next, add the prepared onion chutney and cook for 2 minutes.

Step 11. Add 1 teaspoon jaggery and 1/2 teaspoon salt.

Step 12. Cook until the oil separates from the pan.

Step 13. Finally, enjoy the onion chutney with idli, dosa, rice, or roti.
