7-8 : Medium sized tomatoes
10 - Dried red chillies
5 - Cloves of garlic
2 inch - Piece of ginger
1 tablespoon - Vegetable oil
1 teaspoon - Salt
2 tablespoon - Lemon juice or vinegar
Fresh coriander for garnishing (optional)
1. Soak dry red chillies in hot water for about 15-20 minutes. it becomes soft.
2.Now wash and clean all the tomatoes. Bring a pot of water to a boil.
3. Cut all the tomatoes into big pieces and boil them in water, then boil them until the skin of the tomatoes comes off.
4. Drain the tomatoes and place them in a bowl of cold water to cool. Once cooled, peel the tomatoes and keep them aside.
5.Heat oil in a pan on medium flame.
6. Add garlic and ginger to the pan and fry until fragrant and lightly golden.
7. Drain the soaked red chillies and add them to the pan with the soaked tomatoes. Cook, stirring occasionally, until the tomatoes begin to break down, about 10 minutes.
8. Put the mixture in a blender. Add salt and lemon juice and mix until smooth. Adjust the consistency with a little water if necessary.
9. Pour the chutney into a serving bowl and garnish with fresh coriander if desired.
10. Serve the chutney with freshly boiled momos.
