Ingredients:
- Kathal: 500 grams (peeled and cut into bite-sized pieces)
- Onions: 2 medium-sized (finely chopped)
- Tomatoes: 1 large (finely chopped)
- Garlic: 5 cloves (minced)
- Ginger: 1-inch piece (grated)
- Green Chilies: 3-4(slit)
- Turmeric Powder: 1/2 teaspoon
- Red Chili Powder: 1 teaspoon
- Coriander Powder: 1 teaspoons
- Garam Masala: 1 teaspoon
- Cumin Seeds: 1 teaspoon
- Salt: To taste
- Yogurt: 2 tablespoons (optional)
- Oil: 2-3 tablespoons
- Coriander Leaves: For garnish

how to make kathal :
1. Cut the jackfruit into small pieces and boil in salted water for 10-12 minutes until soft. Filter and keep aside.
2. Heat oil in a pan and fry the boiled jackfruit pieces until they turn golden brown. This step enhances the texture and taste of kathal. Take out and keep aside in a plate.
3. When hot, add cumin seeds and fry for a few seconds until aroma comes.
4. Add chopped onion and fry until golden brown.
5. Add minced garlic, grated ginger and chopped green chillies to it. Cook for 2 more minutes.
6. Add mashed tomatoes and cook until oil separates from the mixture.
7. Lower the flame and add turmeric powder, red chilli powder, coriander powder and salt. Mix well and cook for a minute.
8. If you are adding curd, whisk well to prevent clumping and add to the curry base. – Cook for 2-3 minutes while stirring continuously.
9. Mix fried jackfruit pieces into the curry base. Mix well to coat the pieces in the masala.
10. Add water to get your desired curry consistency. Cover and let it simmer on low flame for 10-12 minutes so that the flavors meld together.
11. Sprinkle garam masala and mix gently. and Garnish with fresh chopped coriander leaves.
12. Serve hot with steamed rice, jeera rice, and other Indian breads like roti, paratha, and naan.
