Ingredients:

  • Cooked Rice: 1 gillas
  • Cauliflower Florets: 1 cups( finely chopped)
  • Onion: 1 medium (finely chopped)
  • Tomato: 1 large (finely chopped)
  • Green Chili: 2(slit lengthwise)
  • Ginger-Garlic Paste: 1 teaspoop
  • Turmeric Powder: ½ teaspoon
  • Red Chili Powder: 1 teaspoon
  • Garam Masala: 1 teaspoon
  • Cumin Seeds: 1 teaspoon
  • Oil or Ghee: 1tablespoons
  • Coriander Leaves: A handful chopped (for garnish)
  • Salt: To taste

how to make gobi rice:

1.Wash the cauliflower thoroughly and cut it into small pieces.

2. Heat oil or ghee in a large pan or kadai on medium flame.

3. Add cumin seeds and let them fry for a few seconds

4. Add chopped onion and green chilli. Fry the onion until it turns golden brown.

5. Add ginger-garlic paste and fry until the raw smell disappears.

6. Add chopped tomatoes and cook until soft and mushy.

7. Add turmeric powder, red chili powder, coriander powder and garam masala, salt. Mix thoroughly to coat the cauliflower with the spices.

8. Cover and cook for 8-10 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

9. If using cooked rice, gently stir it into the cauliflower mixture. Make sure the rice is evenly coated with the spices and cauliflower.

10. Switch off the flame and garnish with freshly chopped coriander.

11. Serve hot with raita, pickle and papad for a complete meal.
