- Tomato: 1 medium size

- Oil or Ghee: 1 tbsp.
- Sumin seeds: 1 tsp.
- Turmeric powder: 1/2 tsp.
- Red chili powder: 1 tsp.
- Coriander Powder: 1 tsp.
- Garam Masala: 1/2 tsp.
- Salt: So taste.
- Coriander leaves: For decoration.
- Kasuri Methi: A pinch for added flavour.
- Lemon juice: A pinch to increase spiciness.

1. Wash the potatoes, peel them and cut them into medium-sized pieces.
2. Chop onion and tomato and chop green chillies into pieces.
3. Gather all the spices in a small bowl for easy access.
4. Heat oil in a large pan or kadhai on medium flame.
5. Add cumin seeds and let them sizzle.
6. Add chopped onions and green chilies. Sauté until the onions turn golden brown.
7.Stir in the ginger-garlic paste and cook for a minute until the raw smell disappears.
8. Add the chopped tomatoes and cook until they soften and release oil.
9. Mix turmeric powder, red chilli powder and coriander powder. Cook for 3-4 minutes. Until a sweet smell starts coming from the spices.
10. Put these potatoes in the pan and mix well, so that all the ingredients are coated well.
11. Now add water as per your requirement.
12. Cover the pan and cook the vegetables on low flame until they become soft.
13. When the potatoes are cooked, add garam masala in it and check the salt, if it less then we can still add some salt, mix the vegetables and let it cook on gas for a minute or so.
14. Garnish with freshly chopped coriander leaves and a squeeze of lemon juice, if desired.
