1. Start by washing the amla thoroughly under running water to remove any dirt or impurities. Pat them dry with a clean cloth. Cut the gooseberry into small pieces and remove the seeds. Cutting the gooseberry can be a bit difficult, so be careful while cutting.
2. Roughly chop green chillies, ginger, garlic, coriander and mint.
3. For added flavour, lightly toast the cumin seeds in a dry pan for a minute or two, until their aroma goes away. This step is optional.
4. In a blender or food processor, add chopped amla pieces, green chillies, ginger, garlic, coriander, mint, cumin and a pinch of asafoetida.
5. Once the chutney becomes soft, add salt to taste and if you like a slightly sweet chutney, add a spoonful of sugar or jaggery. If you like the chutney to be more spicy, you can also add one tablespoon of fresh lemon juice to it. Blend everything again to ensure the masala is evenly distributed.
