Today we will try to share the same recipe with you. Hyderabadi Veg Biryani recipe is an important part of Hyderabad's rich culinary heritage.
This dish is one of the iconic dishes of Hyderabad and holds a special place in the hearts of the people here. Hyderabadi biryani is famous for its unique flavor and rich taste. Firstly, wash 2 cups basmati rice in clean water until the starch runs clear from the water. now soak in water for15-20 minutes.
Now while we are soaking the rice, we will chop all the vegetables and make a paste of ginger and garlic.
We have to cut our vegetables and take the rice. I have used a deep bottom pan to cook the rice and add 5 cups of water. Note: You can use any vessel to cook your rice – pressure cooking or pot cooking.
When the water is hot, add all the spices and 1 teaspoon salt - bay leaves, cloves, black cardamom.
After adding all the ingredients, boil water on high flame.
When the water boils, add soaked Basmati rice into it and after adding, stir the rice slowly with a spoon. And check the taste of the water and make sure it is slightly salty. If you feel like adding salt, you can add more salt.
Do not cook the rice completely, but keep it slightly undercooked.
ake a pan or add 2 tbsp ghee in it, when ghee becomes 0 gram then add these spices in it. 1 cumin, 1 bay leaf, 3 cloves, 1 black cardamom. Fry all the spices till they crackle.
Note: You can also make vegetable gravy in a pan.
After this add chopped onion. Fry the onion while stirring on medium flame. Fry the onions while stirring continuously, so that they cook evenly.
Till then take 1 cup fresh curd in a bowl. - Beat the curd with a spoon until it becomes smooth.
Now Add ginger-garlic paste and chopped green chillies.
Mix ½ teaspoon turmeric powder and 1 teaspoon red chili powder or cayenne pepper. Stir and mix well.
After this add chopped vegetables.Mix the vegetables well and fry for 1 to 2 minutes.
Now add whipped curd. Add salt as per taste and mix again. Then add ½ cup water in the pressure cooker and cook the vegetables.
When the vegetables are cooked, put half a layer of vegetables in a thick bottomed pan and then add half cooked rice. Then add half chopped coriander.
Now try your hand at Hyderabadi Dum Style Biryani. Cover the pen tightly with foil paper. and push through the lid
Now cover the pan with a wet cotton cloth and place a heavy vessel on top.Place the sealed veg biryani pan on the pan. Keep the flame low and cook for 20 to 25 minutes.
After cooking, give rest time for 5 to 7 minutes and later serve Hyderabadi Veg Biryan
