Mashroom fry is a simple and savory dish made by sautéing mushrooms with aromatic spices, onions, and tomatoes. Ingredients:

  • Mushrooms: 250 grams
  • Onions: 2 medium-sized
  • Tomatoes: 1 large
  • Green Chilies: 2
  • Garlic: 4-5 cloves
  • Ginger: 1-inch piece
  • Turmeric Powder: ½ teaspoon
  • Red Chili Powder: 1 teaspoon
  • Coriander Powder: 1 teaspoon
  • Garam Masala: ½ teaspoon
  • Cumin Seeds: ½ teaspoon
  • Salt: To taste
  • Oil: 2 tablespoons
  • Fresh Coriander Leaves: A handful (chopped, for garnishing)
  • Lemon Juice: 1 teaspoon (optional)

how to make Mushroom fry:

1.Wash the mushrooms thoroughly under running water to remove any dirt. Pat them dry with a clean kitchen towel and slice them evenly.

2. Chop onion, tomato, green chilli and chop garlic finely. Have everything ready for cooking.

3. Heat 1 tablespoon oil in a large pan or wok over medium heat.

4. Add cumin seeds in hot oil and let the cumin seeds crackle for a few seconds.

5. Add minced garlic, grated ginger and chopped green chillies to it. Fry for 1-2 minutes until aroma appears.

6. Add chopped onions to it and fry until golden brown. This step is important as it forms the basis of the dish.

7. Add chopped tomatoes and cook until soft and mushy. Smoothen in between to prevent sticking.

8. Add turmeric powder, red chilli powder, coriander powder and salt. Mix well and cook for 2-3 minutes.

9. Add pickled mushrooms to the pan. Stir well to coat them in the spices and onion-tomato mixture.

10. Cover the pan with a lid and let the mushrooms cook on low flame for about 5-10 minutes.

11. (note) : Mushrooms release water while cooking, so there is no need to add additional water.

12. When the mushrooms become soft and the mixture is cooked well, sprinkle garam masala and mix gently.

Switch off the flame and garnish the mushroom fry with freshly chopped coriander.

Squeeze some lemon juice on the dish to enhance the zesty taste.
